Rich, Velvety Chocolate Mousse

- 1 cup Chocolate Chips semisweet
- 1/2 cup Heavy Whipping Cream for melting chocolate
- 2/3 cup Heavy Whipping Cream for whipping
- 1 tbsp Powdered Sugar
- 1/2 tsp Vanilla Extract
Using a double boiler, melt the chocolate chips with 1/2 cup of heavy whipping cream. Set aside and wait until room temperature.
Using a hand or stand mixer, beat the 2/3 cup of heavy whipping cream, vanilla extract, and powdered sugar. Beat until stiff peaks form. Place in fridge while chocolate continues to cool.
Once chocolate is at room temperature, fold in the whipped cream. Transfer to servinf dishes and cover. Frigerate for at least 2 hours or until ready to serve.
