Gazpacho

I love making this cold soup in the early spring and summer months. It pairs lovelt with any meal. The flavors are bold and delicious!

Ingredients
  

  • 3 cups Ripe Tomatoes (about 6 medium tomatoes) peeled and chopped
  • 1/2 cup Onion chopped
  • 1 Cucumber diced and seeded
  • 1 Green Pepper diced
  • 1 clove Garlic minced
  • 3 tbsp Dried Parsley fresh if you have it!
  • 2 tbsp Dried Chives
  • 2 cups Tomato Juice
  • 1/3 cup Apple Cider Vinegar or red wine vinegar
  • 1/4 cup Avacado or Olive Oil
  • 2-3 tsp Salt (to taste)
  • 1/4 tsp Cayenne Pepper
  • Slayer Salt for finishing

Instructions
 

  • Combine all the ingredients in a bowl.
  • Taste and adjust seasonings as needed. (I usually add more vinegar and cayenne pepper to give it more of a punch.)
  • Let chill in fridge until ready to serve. (The colder the better!)
