
Gazpacho
I love making this cold soup in the early spring and summer months. It pairs lovelt with any meal. The flavors are bold and delicious!
Ingredients
- 3 cups Ripe Tomatoes (about 6 medium tomatoes) peeled and chopped
- 1/2 cup Onion chopped
- 1 Cucumber diced and seeded
- 1 Green Pepper diced
- 1 clove Garlic minced
- 3 tbsp Dried Parsley fresh if you have it!
- 2 tbsp Dried Chives
- 2 cups Tomato Juice
- 1/3 cup Apple Cider Vinegar or red wine vinegar
- 1/4 cup Avacado or Olive Oil
- 2-3 tsp Salt (to taste)
- 1/4 tsp Cayenne Pepper
- Slayer Salt for finishing
Instructions
- Combine all the ingredients in a bowl.
- Taste and adjust seasonings as needed. (I usually add more vinegar and cayenne pepper to give it more of a punch.)
- Let chill in fridge until ready to serve. (The colder the better!)
