
Brown Rice
When I describe this recipe to people I struggle. "It is not brown rice like you think it is white rice flavored brown with beef." Still confused? Me too.This dish is an excellent side to pork, chicken, or beef dinners. I usually pair it with pork chops and my asparagus recipe.
Equipment
- 1 Electric Skillet optional
Ingredients
- 2 1/2 cups White Rice (uncooked)
- 2 cans Beef Consumé
- 2 cups Beef Stock
- 1/2 cup Mushrooms (chopped)
- 1/2 Onion (chopped)
- 1 stick Butter
- 1/2 tbsp Salt
- 1/2 tsp Pepper
Instructions
- If using an electric skillet, set to 250 degrees and add butter. If you do not have a skillet, use a medium pot and add butter over heat.
- Chop onions and mushrooms and add to melted butter.
- Brown for 3-5 minutes and then add uncooked rice.
- Stir until combined and add 2 cans of beef consumé.
- Cover and let cook for 5 minutes. Add cup of beef stock and continue cooking.
- Do not let rice burn, stir every few minutes. Add additional broth as needed. Cook about 25-30 minutes until rice is soft and cooked. Add seasonings to taste.
