Brown Rice

When I describe this recipe to people I struggle. "It is not brown rice like you think it is white rice flavored brown with beef." Still confused? Me too.
This dish is an excellent side to pork, chicken, or beef dinners. I usually pair it with pork chops and my asparagus recipe.

Equipment

  • 1 Electric Skillet optional

Ingredients
  

  • 2 1/2 cups White Rice (uncooked)
  • 2 cans Beef Consumé
  • 2 cups Beef Stock
  • 1/2 cup Mushrooms (chopped)
  • 1/2 Onion (chopped)
  • 1 stick Butter
  • 1/2 tbsp Salt
  • 1/2 tsp Pepper

Instructions
 

  • If using an electric skillet, set to 250 degrees and add butter. If you do not have a skillet, use a medium pot and add butter over heat.
  • Chop onions and mushrooms and add to melted butter.
  • Brown for 3-5 minutes and then add uncooked rice.
  • Stir until combined and add 2 cans of beef consumé.
  • Cover and let cook for 5 minutes. Add cup of beef stock and continue cooking.
  • Do not let rice burn, stir every few minutes. Add additional broth as needed. Cook about 25-30 minutes until rice is soft and cooked. Add seasonings to taste.
